4 eggs
1/2 c. grated Parmesan cheese
1/2 c. grated Mozzarella cheese
1/2 c. olive oil
1 tsp. dried parsley
1 tsp. bottled, crushed garlic
1/2 tsp. salt
1/4 tsp. black pepper
3 c. sliced zucchini (sliced evenly and thin)
1 c. Bisquik
1 small onion, chopped

Directions:
Directions:
Preheat the oven to 350°F.

In large bowl, beat eggs with fork. Stir in Parmesan cheese, Mozzarella, olive oil, parsley, garlic, salt and pepper.

Stir in sliced zucchini and Bisquik and onion. Pour into 9-inch pie dish.

Bake 45 minutes until firm in center to touch.

To reduce the carbs, you can substitute for the Bisquik:
3/4 cup almond flour
3 T. coconut flour
