Eggs - usually 1 egg per person
Flour - start with 5# bag / more depending on eggs
Water
Pasta-Dough machine

Directions:
Pour flour on your pasta table or board.
Make a well in middle of flour. Basically turning the flour into a bowl.
Break eggs into the middle of flour; you can also fill a couple eggs with water. **This works well when making a large amount of pasta.
With a fork in each hand, beat eggs; gradually mixing flour into the mix.
Once all eggs are absorbed into flour, start to knead dough with your hands until smooth.
Wrap dough with plastic wrap or bag to soften dough. Wait a bit, and knead again.
Cut into strips and roll out dough in pasta machine; tightening rollers each time.
Once you have desired thickness, choose the cut you want; roll the pasta; hang pasta on a stick until ready to cook.
