1 2/3 blueberries (fresh or frozen)
2 tablespoons flour
3/4 cup oatmeal
1 1/2 cup sifted all purpose flour
3/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup cold butter
zest of 1 lemon
2/3 cup milk
1 egg beaten
11/2 tablespoons sugar
2 teaspoons cinnamon

Directions:
Directions:
Toss first two ingredients together and set aside.
In a large bowl combine the oatmeal, flour, sugar, baking powder and salt.
Add butter and lemon rind.
Blend with hands until the mixture resembles coarse meal.
Add floured blueberries and gently mix.
In a separate bowl, combine the milk and egg.
Add to dry mixture and stir until just combined.
Spoon batter (it is very thick) into 12 buttered or lined muffin cups.
Combine sugar and cinnamon in a small bowl and sprinkle over the muffins.
Bake for 20 to 25 minutes at 350ºF

If the blueberries are frozen do not thaw before use.
If you want a less sweet muffin add 1 teaspoon cinnamon to the batter and omit the topping.
Do not use a mixer for this recipe or over work the batter as the muffins become "tough". This was a favorite snack when Brenda and Tom went fishing around Kingston.
