6 4 oz Fresh or Frozen Skinless Salmon Fillets, 1" thick (Thawed if frozen)
Course Salt and Fresh Ground Pepper
1/4 C Snipped Italian Parsley
1/4 C Reduced Sodium Chicken Broth
1/4 C Dry White Wine
1 T Extra Virgin Olive Oil
4 Lg Cloves Garlic, minced
1/2 tsp Crushed Red Pepper

Directions:
Directions:
Preheat oven to 425º. Rinse Salmon. Pat dry. Sprinkle both sides with salt and pepper, set aside.

Combine all other ingredients in a small bowl.

Place salmon, flat side down in baking dish. Pour parsley mixture evenly over salmon.

Bake uncovered for 8-12 minutes or until fish flakes easily with fork.

I usually marinate the salmon with this mixture for a couple of hours before I cook it.This is great wrapped in aluminum foil and cooked on the grill.
