2 Tablespoons olive oil
1 1/4 pounds boneless top round or chuck steak cut into 1 inch pieces.
6 large garlic cloves
6 cups reduced sodium beef broth
1 cup Guinness Draught
1 cup red wine
2 tablespoons tomato paste
1 tablespoon sugar
1 tablespoon dried thyme
1 tablespoon Worcestershire sauce
2 Bay leaves
2 Tablespoons of butter
3 lbs baking potatoes peeled and cut into cubes
2 cups carrots cut into slices
1 large onion chopped
salt and pepper to taste
2 tablespoons chopped fresh parsley

1. In a large pot heat the olive oil over medium high heat. Add the beef and cook , stirring occasionally, until browned on all sides, about five minutes. Add the garlic and cook, stirring constantly, until fragrant, about a minute. Stir in the broth, Guinness, wine, tomato paste, sugar, thyme, Worcestershire Sauce, and bay leaves and bring to a boil. Reduce the heat and simmer, covered, stirring occasionally, for one hour.

2. Meanwhile in a large fry pan melt the butter over medium heat add the potatoes carrots and onion and cook stirring occasionally for 20 minutes.

3. Add the vegetables to the beef mixture. Simmer uncovered until the beef and vegetables are tender, about 40 minutes. Discard the bay leaves and skim the fat from the surface.

There is gonna be a snow day. It's gonna be cold and they are going to call for it the day before. Get Mom to get this and tell her to make it while you fire up the snow blower. When you come in this is the closest thing to a perfect lunch you can get. I guarantee!!!
