3 tablespoons of unsalted butter
4 scallions thinly sliced
white pepper or freshly ground black pepper
8 thin lemon slices
2 medium shallots thinly sliced
2 tablesppons chopped fresh parsley
2 tablespoons fresh chopped dill
whatever fish mom brings in that you don't want to eat!

1. Prep the grill for medium hot heat
2. Take a sheet of aluminum foil for each fish and put an equal amount of butter on each piece of foil. In a remaining skillet melt a tablespoon of butter on medium high heat add the scallions salt pepper and stir for three minutes.
3. Place a fish in each piece of foil centered. layer the top of the fish with two lemon slices and an even amount of the scallions shallots parsley and dill. Make a pocket and completely encapsulate the fish.
4. Put the packets on the grill and cook for ten to 12 minutes.
