Ingredients: 2 C Flour 1 tsp Salt 1/2 tsp Soda 1 C Buttermilk A little less than 2 Tbls Crisco

Directions:Put dry ingredients into a bowl. Cut shortening into the dry ingredients with two forks or a pastry blender. Add the buttermilk and stir. Dough will be very wet. Add flour to hands to make it easier to handle. Place plenty of flour onto your pastry board and roll out dough with a rolling pin until very thin circle or oblong shape. 1/8" or so. Cut into small squares with a knife. Dip some (or all) of the dumplings into flour as you place them onto a plate. Once all dumplings are cut and dipped into the flour - bring a dutch oven sized pan (or soup pan) full of well flavored chicken broth to a full boil. Drop the dumplings into the rolling broth one at a time, pushing them gently aside with a spoon so that more dumplings may be added, until all dumplings have been added to the broth. Add some cooked shredded chicken to the pan. Add salt & pepper to taste. Cover pan with a lid and let slowly simmer for 15 minutes or so. DO NOT OVER STIR AS THEY WILL BREAK APART EASILY. These go very well with tiny green peas. |
