4 cups chopped kale
1/4 tsp salt
3 tbs grated carrots
1/2 tsp chopped chives
1 cup quinoa (I use an ancient grain blend with red and white quinoa, millet and buckwheat)
2 cups water
1/3 cup toasted sunflower seeds
Dressing:
1 clove garlic
1/4 tsp dry mustard
1/4 tsp salt
1/4 tsp pepper
1 tsp Dijon mustard
1 tbs honey
1/4 cup freshly squeezed lemon juice
1/4 cup olive oil

Directions:
Directions:
Cut rib out of kale and chop greens into 1/2 inch pieces. Rub salt throughout to help tenderize the greens. Set aside.
Place quinoa and water in rice steamer as directed. When done, cool.
To make dressing, place garlic, dry mustard, salt and pepper in mortar and pestle. Blend well into a smooth paste. Add Dijon, honey and lemon juice. Mix until smooth. Blend in oil.
Rinse kale in cold water and drain thoroughly. Add chives, carrots and dressing. Mix well. Then fold in quinoa and sunflower seeds. Chill.
