Bran Muffins Recipe

2 cups 100% bran cereal

1 quart of buttermilk

4 cups All Bran cereal

2 cups boiling water

1 cup shortening

3 cups sugar*

4 eggs, beaten

5 cups all-purpose flour

1 teaspoon salt

5 teaspoon baking soda

2 cups raisins (optional)

Directions:
Directions:
Add buttermilk to 100% Bran cereal to soak until moist.
Add boiling water to All Bran cereal until moist.
Cream shortening with sugar, add eggs.
Add Bran cereal soaked in buttermilk.
Sift flour, salt and soda together. Add to above mixture. Mix well.
Mixture will last for 6 weeks in the refrigerator.
When ready to serve pour into greased muffin tins.
Bake in a 400º oven for 15 to 20 minutes.
Yield: 5 dozen
*(You can use as little as 1 cup sugar.)
