Directions: |
Directions:With an electric mixer, beat the first 6 ingredients until blended. Fold in the chocolate chips. Pour into a well-greased bundt pan. Bake in a preheated 350º oven for 50 minutes. Wait for 15 minutes and invert the pan. Let cool completely. Frosting: In a small saucepan, mix flour and milk together and cook until it forms a thick paste; cool. In a large bowl, cream shortening, butter and cream cheese for 4 minutes. Add the sugar and salt and beat for another 4 minutes. Add the vanilla and milk paste; beat until creamy. Taste the frosting. If you want it sweeter, add 1/4 cup or more of powdered sugar. Spread over cooled cake or place into a piping bag and zig-zag over the top of the cake. |

Notes: Recently the paper had a copycat recipe for the double chocolate bundt cake from the "Nothing Bundt Cake" chain. I was very excited to try the recipe, since I love their cakes. Not only was it easy, the taste was almost "dead on" to the original cake. The frosting was a bit more work, but if you don't have the time, you can either sprinkle powdered sugar or drizzle hot fudge on the top. Make it and let me know how close you think it comes to the "real deal!"
