1 heaping quart fresh strawberries
3 cups sugar, divided

24 HOURS AHEAD:Remove caps from strawberries. Wash twice and drain well.
Place berries and 1 1/2 cups sugar in large, heavy saucepan, slowly bringing to a boil. Boil 5 minutes. Add remaining sugar. Boil 10 to 15 minutes or until fruit is thickened. Pour into large mixing bowl and let stand 24 hours, stirring occasionally.
NEXT DAY: Pour fruit into sterilized 1/2 pint canning jars. Screw on tops and process in boiling water bath 15 minutes to seal.
