4 fresh tomatillos (green tomatoes), husks removed
3 raw jalapeņo or serrano peppers
1 can salsa verde
1 clove garlic, peeled
1 pack bacon, chopped into small pieces
2 pounds flank steak, chopped into small pieces
4 teaspoons chicken bouillon granules
1 can black beans (or 2 cups cooked beans, if from scratch)
1/2 onion, chopped
1 bunch of fresh cilantro
4 medium potatoes, cubed
ground black pepper, to taste
1 can of beer (Ale preferred)

Marinate chopped beef in beer for at least an hour in fridge. Can be marinated overnight.
Chop bacon into small pieces and cook in a nonstick pot until well done (not too crispy)
Remove bacon into a dish lined with absorbent paper towel.
Using half of the bacon grease left over, brown chopped beef, seasoning with salt and pepper to taste in pot.
Chop tomatillos in half, blend with half of the cilantro, the can of salsa verde, 1 jalapeņo or 2 serranos, the garlic, and 1/2 of the onion. Add to browned beef.
Add 1-2 cups of water and bouillon.
Add potatoes and bacon. Let it come to a boil.
Serve and garnish with chopped onion, chopped cilantro, beans.
Add a bit of lime if desired, and enjoy with tortillas.
