3 cups diced fresh rhubarb
1 cup sliced fresh strawberries
1 cup sugar
2 eggs, beaten
2 tbsp. cornstarch or tapioca
pastry for a double-crust 9-inch pie, unbaked

Directions:
Directions:
Combine rhubarb, strawberries, sugar, eggs and cornstarch; mix well. Pour into pastry shell. Arrange strips of pastry, lattice fashion, over top and crimp edges. Bake 10 minutes in a preheated 450º oven; reduce temperature to 350º and bake 30 to 40 minutes more.

Mom always had a rhubarb plant in the backyard. As kids, the rhubarb was a bit too tart to enjoy, but mom found the perfect way to disguise it. In later years, she would often make it using a single premade crust and then mix some sugar, butter and flour together to make a crumble to put on the top. Oh, it's so good!
