Crust:
1/2 cup margarine, softened
1 cup flour
1 tsp. sugar
1/2 tsp. salt
1 tbsp. vinegar

Filling and Glace:
1 1/2 cups sugar
3 tbsp. cornstarch
3 cups fresh blueberries, washed and drained
1 1/2 cups water
sweetened whipped cream

Directions:

Crust: Mix margarine, flour, sugar and salt. Sprinkle with vinegar and form a ball. Press evenly into a 9-inch pie plate. Bake in a preheated 400º oven for 12 to 15 minutes or until golden brown. Cool. Filling: In a medium saucepan, combine sugar and cornstarch. Add 1 1/4 cups blueberries and water; bring to a boil, stirring constantly. Cook until thick and clear. Cool slightly. Pour the remaining blueberries into the cooled pie crust and pour thickened mixture over the top. Chill thoroughly and top with whipped cream.

Mom found this recipe in a Dutch cookbook she bought in Holland, Michigan. It contained so many great recipes that years later she went back and bought one for each daughter. This blueberry pie is no exception. Mom would make it often, but if time was short, she would use a pre-made frozen crust. It is so fresh, delightful and easy to make...especially when using hand-picked Michigan blueberries!
