3/4 cup butter
1 1/2 cups sugar
2 eggs
1 tsp. vanilla extract
1 tsp. sugar
2 cups flour
1 tsp. salt
1 tsp. baking soda
2 tsp. pumpkin pie spice
1 tsp. ground nutmeg
1 tsp. ground cinnamon
1/2 cup buttermilk
1 cup canned pumpkin
12 oz. white chocolate chips

In a mixing bowl, beat the butter and sugar until light and fluffy. Add eggs and vanilla; beat for an additional minute. Sift together all dry ingredients. Fold the dry ingredients, alternating with the buttermilk, into the batter. Add pumpkin and blend completely. Heavily coat a 9x13-inch pan with cooking spray. Pour batter into pan and top with the white chocolate chips. Bake in a preheated 350º oven for 30 to 35 minutes or until toothpick comes out clean.

Mom received this recipe from a woman she worked with many years ago. It is very moist and delicious for the holidays. It could easily replace one of the pumpkin pies at your Thanksgiving dinner!
