3 lb. pork tenderloin
1/2 cup soy sauce
1/2 cup whole green onions, chopped
1/2 cup fresh parsley, minced
1 tsp. salt
1 tsp. white pepper
1 tsp. garlic powder
1/2 tsp. cinnamon
1/2 tsp. allspice
1/8 tsp. cayenne pepper
Meat stock or red wine

NIGHT BEFORE:
Place pork in shallow container and coat with soy sauce.
In food processor, chop onions and parsley. Add salt, white pepper, garlic powder, cinnamon, allspice and cayenne. Mix.
Cover meat on all sides with onion-spice mixture.
Cover and refrigerate overnight.
WHEN READY TO COOK:
Bring pork to room temperature, no longer than 30 minutes.
Preheat oven to 325 degrees.
Place meat on wire rack in roasting pan and insert meat thermometer into thickest part.
Bake until meat thermometer registers 145 degrees.
Increase heat to 350 degrees and cook until thermometer registers 165 degrees, 10 to 15 minutes more.
Remove meat from pan. Slice and keep warm.
Deglaze pan with stock or wine and strain if necessary..
Serve over pork slices.
