6 egg yolks
6 oz. cream cheese, cubed and softened
Dash cayenne pepper (to taste)
2 sticks butter
2 tbsp. fresh lemon juice
Salt and pepper to taste

Directions:
Directions:
Place egg yolks, cream cheese and cayenne in blender. Cover and blend at low speed until cheese is smooth, about 5 seconds.
In small saucepan, heat butter and lemon juice until butter melts and almost boils.
Turn blender on high speed. Slowly pour in butter, blending until thick and fluffy, about 30 seconds. Pour into saucepan or double boiler over warm water. Season to taste; keep warm.
