1/2 lb. (before grating) Munster cheese, grated
1/2 lb. (before grating) Gouda cheese, grated
1 tbsp. dry sac sherry
1/2 tsp. tarragon
1/2 tsp. basil
2 tbsp. jalapeno mustard
4 tbsp. butter
2 - 4 jalapeno peppers, peeled, seeded & minced
2 tbsp. pimentos, minced

Soak spices in sherry and set aside for 15 minutes. Grate cheese into a large mixing bowl. Add sherry and spices to cheese mixture and blend thoroughly. Serve at room temperature with jicama and tortilla chips.
