2 lbs. carrots, peeled, and sliced diagonally
3 T. butter
3 T. Dijon-style mustard
1/4 c. brown sugar
salt to taste (optional)
1/4 c. chopped fresh parsley (optional)

Directions:
Directions:
Steam carrots 5 minutes. In small saucepan, melt butter. Add mustard, brown sugar & salt. Cook 3 minutes. Add carrots, turning to coat in sauce. Cook 5 minutes. Sprinkle with parsley. (6 servings)
