1 T. olive oil
1/2 c. onion,chopped
2 cloves garlic, minced
1/2 tsp. dried oregano
1 (15 oz.) can diced tomatoes, with juices
4 c. low-sodium chicken or vegetable broth
9 oz. tortellini, any variety (fresh or frozen)
3 c. fresh baby spinach, loosely packed
salt and pepper
grated Parmesan cheese, for serving

Directions:

1. In a large pot or Dutch Oven, heat the olive oil over medium heat.
2. Add the onions and cook until they begin to soften, about 5 min.
3. Add garlic, cook. Stirring frequently, just until fragrant, about 1 min.
4. Mix in the oregano and diced tomatoes.
5. Add the broth into the pot.
6. Bring the mixture to a boil.
7. Add tortellini to the pot and cook according to package directions.
8. One minute before tortellini is fully cooked, stir in the spinach.
9. Remove from heat.
10. Season with salt and pepper to taste.
11. Serve warm with grated Parmesan cheese as desired.

I usually double this recipe.
