2 cups chorizo, crumbled
4 large tomatoes, chopped
1 bunch (6-8) green onions, chopped
8 oz. green chile, chopped
1 (4 oz.) can black olives, sliced
1 (4 oz.) bottle green olives, sliced
4 cups Monterey jack or munster cheese, grated
2 cups sour cream
6 eggs, beaten
2 deep dish frozen 9 inch pie crusts or homemade

Fry chorizo until the pink is gone. Drain the fat, set aside. In heavy skillet, saute onions, tomatoes and chile until soft. add olives and chorizo and mix thoroughly. Pat half of mixture into one pie shell. Repeat in the other shell. Divide cheese equally between the pie shells. Mix eggs and sour cream together. Pour half of the mixture into each pie shell..
Bake at 350º for 45 minutes to 1 hour, until toothpick comes out clean. Let stand for 15 minutes before serving.

If you have a favorite pie crust recipe, use it or use ready-made. This recipe makes two quiches. Serve one and freeze the other one. When making quiches, be sure to flute the edges very high, so the filling doesn't spill over.
