1 large tomato or (better) 2-3 ripe plum tomatoes, cut into 1/2 inch chunks/cubes
1-2 large avocados, cubed
1 large ripe mango, cubed
1/4 C orange juice
6-8 Cups mixed salad greens - about a third or even HALF should be watercress (but you could substitute arugula or other peppery green for this if you can't find watercress)
Generous handful of mint leaves - chopped or cut with scissors into bits


Dressing (is Lily Lime Vinaigrette from All Around the World cookbook by Sheila Lukins):

1/3 cup fresh lime juice
1 T dijon mustard
salt and freshly ground black pepper, to taste
1/2 cup olive oil
1/2 cup veg oil
1 T minced shallots (I always forget these, but it's better when I don't forget)
finely grated zest of 1 lime
3 T snipped fresh chives (I also forget these, and it doesn't seem to matter)

For the salad -- put chopped tomato, avocado and mango into a small bowl together and pour in the orange juice - let soak while you make the dressing and prep the salad greens. (sometimes I add a couple of T of lime juice in as well, which is nice.)

For the dressing -- in a small bowl, whisk together the lime juice, mustard, salt and pepper. Slowly drizzle in the oils, whisking constantly and furiously - constantly! Until your arm is exhausted and the oils are mixed in and the dressing is thickened. Stir in the shallots and lime zest, and add the chives 15 minutes before serving, if you remembered to buy them, which I have never done.

Mix your greens with chopped up mint - and add your tomato/avo/mango mix and toss - then pour the dressing over the top.

This is my favorite salad to mark that summer has arrived! Real yummy with grilled meat - especially shrimp - or by itself.
