6 - 10 California chiles, peeled & seeded (leave stems on)
1/2 lb. mozzarella or jack cheese, cut into large pieces
2 eggs, separated
2 tbsp. flour
1 tsp. thyme

Directions:
Directions:
Slit chiles down the middle and insert a piece of cheese into each one. Beat egg whites until stiff. Fold in beaten egg yolks, flour, and thyme. Dip chiles into the egg mixture. Fry in half inch of hot olive oil in heave skillet. They will puff up and get golden brown. Remove and drain on a paper towel. Serve with favorite salsa.
