1-1/2cups cornmeal
1-1/2 cups sour milk
2-1/4 cups Flour
1 cup sugar
1-1/2 tsp Baking powder
3/4 tsp Baking soda
1/2 tsp salt
3 eggs - slightly beaten
3/4 cup melted butter
strawberry jam

Directions:
Directions:
Combine cornmeal and sour milk and let stand for 10 minutes.
Combine flour, sugar, baking powder, soda and salt. Blend in cornmeal mixture, eggs and melted butter stirring just until moistened.
Spoon into 16 muffin tins lined with paper baking cups, filling just to top of paper liners.
With a small spoon shape a well in the center of each muffin. Fill well with jam.
Bake in 400º F oven for 20 minutes.
