. 6 strips of bacon ( optional )
. 1 chopped onion
. 3 med. sized potatoes, diced
. 3 cups of water
. 3 chicken buillion cubes or 2 TBS. dry chicken soup base
. 1/2 tsp. sea salt
. 3 TBS flour
. 1 cup whole ( or 2 % milk )

Fry bacon until crisp. Drain well and set aside.
Saute onion in the bacon drippings or in olive oil.
Put diced potatoes, onions, water and spices in large pot and cook until potatoes are tender. Add the milk and cook for another 5 -10 min.
Mix the flour with olive oil to make a paste.Gradually add paste to soup until you get the desired thickness.

Garnish with the crushed bacon bits and parsley.
