1 can (16 oz.) salmon, drained & flaked
1 pkg. cream cheese, softened
1 T. lemon juice
1 tsp. grated onion
1 tsp. prepared horseradish
1/4 tsp. liquid smoke (optional)
1/4 tsp. salt
1/2 cup. chopped pecans
2 T. parsley, snipped

Directions:
Directions:
Combine salmon, cream cheese, lemon juice, onion, horseradish, salt and liquid smoke, if using. Roll into a log or ball and roll in mixture of pecans and parsley. Chill. Serve with crackers.

I have a copy of this in Peg Brown's handwriting but also one in Esther Bowers' handwriting. Esther and Peg were sisters. We like this with the liquid smoke but prefer even less than 1/4 teaspoon full.
