2 T white wine vinegar
1/2 C plus 2 T white wine
2 Shallots, finely chopped
1-2 T wasabi paste, to taste
1 T Tamari (not regular soy)
1 C unsalted butter, cold, diced 1/2"cubes
Salt and Pepper
1 Bunch cilantro, chopped
6 Tuna filets (approx 5 oz / each)

Directions:
Heat grill. To a saucepan, add vinegar, wine and shallots, simmer to reduce to about 2T. Strain out shallots. Return strained sauce to pan. Add wasabi and Tamari. Simmer on low; whisk in butter, slowly, incorporate each cube before adding the next. Add cilantro and seasonings. Grill Ahi to rare or medium rare red on inside and seared nicely on the outside. Serve with the butter sauce atop and cilantro garnish. Serves 6.
