2 racks of pork baby back ribs - about 4 1/2 lb.
2 tbsp. of olive oil
1/4 cup packed brown sugar
1/4 tsp. paprika
1 tbsp. black pepper
1 tsp. garlic powder
1 tsp. onion powder
1/2 tsp. cayenne pepper
1/2 cup barbecue sauce (I use Sweet Baby Rays)
1/4 cup beer (flat)

Rub ribs with oil. In a small bowl, combine the brown sugar,paprika, pepper, garlic powder, onion powder and cayenne, rub over ribs. Adjust the spices to your taste with experience.

Wrap in a large piece of heavy-duty foil. Seal the edges of foil. In a small bowl combine barbecue sauce and beer; set aside.

Grill ribs, covered, over indirect medium heat for about 1 hour. Carefully remove the foil. Place over direct heat; basting with reserved sauce. Grill 20 minutes longer or until juices run clear and meat is tender, turning once and basting occasionally.

This is the basic recipe but when I make these ribs, I usually marinate them for at 24 hours in a white wine/minced garlic mixture first.
