White Rice
Milk or canned cream (milk)
sugar
cinnamon, optional
raisins, optional
vanilla

Directions:

In a 3 quart sauce pan with lid, bring 2 cups water to boil. Add 2 cup rice, cover, bring to a boil, turn down to simmer for 20 minutes or until water is gone. Add sugar to taste, cream or milk to consistency you like. Add cinnamon to taste and raisins, if wanted. Add 1 teaspoon of vanilla.

Mama made this often. It is easy and simple and will feed a lot. Depending on altitude, add about 1/4 cup water, it takes more water, in high altitude. Mama added cinnamon once in awhile, not always. I don't think she ever added raisins, but they can be added. Her sister, Aunt Lee, always made this when company came. This was used as a dessert. Mama told me once when I was bragging about how well I made this dish, "It is easy, you use twice as much water as rice!" Blew my bragging rights, right out the window. So, like me, this is a dessert you can make, when most desserts escape you. Mama had a bowl of this at most family get-togethers. She used cinnamon when she wanted the dish to have that special touch. She used canned 'pet' evaporated milk to make hers. This gives this a richer taste than "just milk" tastes. Mama was all about making her dishes look as good as they tasted.
