4-5 medium potatoes- boiled, peeled, and diced
3 hard boiled eggs- diced
1 and 1/2 C. miracle whip
1 Tbsp. mustard
2 tsp. minced onions
3/4 tsp. salt
1/2 C celery, minced
1 and 1/2 tsp. cider vinegar
2 Tbsp. pickle relish
paprika for garnish

1. Scrub potatoes, made a shallow slice around the potato before boiling. Cook the potatoes till just tender, not mushy. Cool & when cool, squeeze ends of potatoes to have skin slip off.
2. Cut potatoes into bite size pieces
3. In large bowl, combine miracle whip, mustard, onions, mustard, salt , celery, vinegar, and relish.
4. Add potatoes to miracle whip mix. Add diced eggs also.
5. Season to taste. Place in serving bowl & sprinkle paprika on top for garnish. Refrigerate till serving time. Keep Cold.
** Variations: Add slivered carrots and/or bacon bits (grandma didn't do this)

Grandma Wilson had no recipe other than in her head for potato salad. She usually have James O. taste test it to see what it needed. Wilma's extended family always requested she bring her salad to family reunions. I tried to write a recipe as I had been demonstrated how to make the salad. Hopefully it's close.
