Chop 1 large white onion
2 1/2 c. chopped celery
1.5 spice container of sage (Don't over spice. Taste will come out once cooked)
4 loaves of white bread
Salt

Prepare bread about 5 day's prior if you can…so bread can dry out. (You could dry out in oven in a pinch.)
This recipe is for a large Thanksgiving dinner. So this serves about 25 people.

Break up about 4 loaves of white bread into several brown paper bags. Keep turning over everyday so the bread gets to air out.

When you're ready to start wash those hands because this is all mixed by hand. Find a very large roasting pan or mammoth bowl. Start by adding as much bread as your bowl can handle (while leaving room to mix ingredients around). Add 1 large chopped white onion. 2 1/c. chopped celery and 1/2 spice container of sage. (Add more later to taste). Add water slowly and mix together until you get a pasty consistency. Take the bird out of the pan it was cooking in and leave the broth. Add the stuffing and bake at 425-450 degree for about 45 min. or until done.
