Praline Brownies Recipe

3 sticks butter
1/4 cup water
1¼ c sugar
1½ cup semi-sweet chocolate
3 cold eggs
2tsp vanilla
1c pralines
1 cup chocolate chips.
1/8tsp baking powder
3c light brown sugar.
14 oz or 1 can evaporated milk.

Preheat Oven 325

1/4lb butter (1 stick) bring to a boil then add 1/4 cup water then bring back to a boil then add 1¼ c sugar and bring to a boil. You are boiling it 3 times. Place in a glass bowl. Take 1½ cup semi-sweet chocolate and add to the butter mixture and mix with a mixer. When it’s cooled a bit during the mixing add your egg/vanilla mix. (Make sure it’s not hot or the eggs will scramble). In another bowl add 3 cold eggs and 2tsp vanilla. Next add your flour mix to the mixer. Add 1c pralines and 1 cup chocolate chips.

Flour Mix - Take “pastry flower” and 1/8tsp baking powder and sift (pastry flour contains no gluten).

Put in a pan and bake at 325 for about 25 min. watch edges and as it pulls away from pan it’s done.


Topping - You need a candy thermometer and watch carefully. You must be in ½ degree of temp. or it’s not good

3c light brown sugar.
2 sticks of butter
14 oz or 1 can evaporated milk.

Stir and cook medium heat to 224 degrees. Watch closely because as soon as you get to 218 degrees you better be ready to take off the heat. You must constantly stir and it takes 20 minutes. Turn the heat off and add 2 cups pecans and stir a few minutes and let it cool 30 minutes.

Brownies and topping must be cooled. You can even head the topping the next day to use.
