2 cups fresh broccoli (par boiled), or thawed frozen broccoli
2 cups cubed, cooked chicken
1 chopped onion
3 cups shredded cheddar cheese
3 eggs
1 1/3 cups milk
1 tsp salt
1/2 tsp pepper
3/4 cup Bisquick

Directions:
Directions:
Boil fresh broccoli for 5 minutes and drain, or thaw and rinse frozen broccoli. Add chicken, onion, 2 cups cheese, and put in a pie plate. Beat eggs, milk, salt, pepper, and Bisquick together with a fork. Pour over the chicken mixture and bake at 400º for 40 minutes. Top with remaining cup of cheese and bake another 5 minutes or until cheese is melted.

Chicken can be omitted and replaced with double the broccoli for a meat free casserole.
