3 c. water
1 c. short grain rice (arborio, valencia are good brands)
4 whole cloves
(2 inch piece cinnamon stick)
(14 oz.) fat free sweet condensed milk
1/2 c. evaporative fat free milk
1/2 c. light coconut milk
1/2 c. gold raisins
1 Tbsp. chopped ginger
1 tsp. lemon rind grated
1/2 tsp. ground cinnamon (optional)

Directions:
Place water and rice in a large saucepan. Place cloves, vanilla, cinnamon on cheesecloth. Tie the cheesecloth together securely. Add to rice mixture. Bring to simmer over medium heat - stir frequently. Reduce to low and cook 20 minutes or until rice is tender and liquid is almost absorbed.

Stir in milk and raisins and cook 10 minutes. Stir frequently. Stir in ginger, rind and salt. Cook 10 minutes. Stir frequently. Remove cheesecloth with spices. Pour rice into individual bowls. Sprinkle with cinnamon.
