1 12 oz. can beer
1 lb. Monterey Jack cheese, shredded
4 oz. canned green chile, chopped
4 oz. jar pimentos, chopped
Green chives, chopped and green olives for garnish
Flour tortillas

Directions:

Pour beer into a hot chafing dish, double boiler, or a heavy sauce pan (stir constantly if you use a sauce pan). Add cheese, chile and pimento. Heat on medium until cheese is melted. Garnish with chives and green olives. Pour into serving dish.
Serve with tortilla chips.*

I got this recipe from my friend Marcia Campbell. A really simple dish. If you have a chafing dish, use it for this recipe.

*Fried chips are easy. Chips that come in a bag are tasteless. These are wonderful and your guests will love them. Heat two inches of oil in large skillet on medium high until very hot. Cut flour or corn tortillas in quarters. Put a layer of tortillas carefully in the hot oil. Fry until golden brown. Remove with tongs and place on a paper towel to drain. Repeat until all tortillas are cooked.
