3 T all-purpose flour
1 tsp Kosher Salt
1/2 tsp baking powder
1 medium onion finely diced or grated
1 large egg (beaten mercilessly)
4 medium potatoes (approx. 2.5 lb.s), shredded
1/2 C veg or canola oil

Directions:
Directions:
Easy. Combine all ingredients. Form into patties. Make sure potatoes are rinsed and dry first. Drop patties into hot oil and cook for about 3 minutes per small batch. Latkes will be golden brown. Lay latkes on paper towels to absorb excess oil before service. Latkes will have a crunch but tender on the inside.
Sauce: Sour cream, lemon zest, cayenne pepper, white pepper and chopped green / spring onion. Cinnamon applesauce is another favorite to serve with this. Garnish with fresh lemon wedges.

Grandma and Ma made these with leftover mashed potatoes. I like to use fresh, shredded for the texture and crunch for the kiddos. We only got applesauce for side dish, but I use sour cream lemon sauce. For fun? Toss in Franks Hot Sauce (with butter) as a dipper and serve with bleu cheese (Marie's Super Bleu) for football - Go BILLS!
