2 gallons cucumbers
1 lb. salt
2 T. alum
2 T. ginger
5 lbs. sugar
1 t. alum
1/2 gallon vinegar
1/2 cup mixed pickle spices

Directions:
Directions:
Soak 2 gal. cucumbers from 5-10 days in brine. (9 pints boiling water and 1 lb. salt). Cut cucumbers in slices if they are not tiny soak in alum water for 24 hours. (2 T. alum to 1 gal water). Make ginger tea by putting 2 heaping T. ginger to 1 gal water. Put cucumbers in tea and boil slowly 1 hour. Remove and drain on cloth. Make a syrup of 5 lbs. sugar, 1 t. alum and 1/2 gal. vinegar. Bring to a boil. Drop cucumbers in and boil 5 minutes. Tie 1/2 cup mixed spices in cloth and drop in syrup when you start to boil pickling syrup. Pack hot and seal.
