3 t. extra virgin olive oil
4 cloves garlic smashed
one medium onion sliced
1/2 c. dry white wine
1/2 c. chopped parsley
4 pounds mussels washed and debearded

Directions:
Directions:
Heat oil. Add garlic and onion until soft with medium heat. Add wine, parsley, mussels. Turn heat to high shaking mussels until open about 8-10 minutes. Strain liquid into a saucepan to thicken. Add a bit of butter to glisten.

Add 1 t. fresh garlic and a little fresh parsley to garnish.
