1 cup sugar
1/2 cup apple cider vinegar
1 cup vegetable oil
2 cans whole corn (drained)
1 can black eyed peas (rinse and drained)
1 can black beans (rinse and drained)
1 small jar chopped pimentos
1-2 chopped jalapenos (for desired amt of heat)
1 small red onion
1 cup chopped celery

Directions:

In saucepan combine sugar, vinegar and oil, Bring to a boil and simmer x 10 minutes. Set aside to cool. In large bowl, combine the remaining ingredients and pour cooled liquid over the top. Stir together and refrigerate. Great with tortilla chips or as side dish. Can be kept in refrigerator for up to 2 weeks. Can also freeze,
