12 cups small young beets

Syrup:
2 cups cider vinegar
2 cups sugar
2 cups water
1 Tbsp salt
1 Tbsp ground allspice
2 Tbsp whole cloves (tied in cheesecloth)

Directions:
Directions:
Select small young beets 1" to 1 1/2" in diameter. Scrub thoroughly leaving root and 1" to 2" to stem. Cook until just tender. Dip in cold water and remove skins. One 6 qt basket will yield about 12 cups of prepared beets.

Bring syrup ingredients to a boil for 5 minutes. Remove cloves. Keep syrup hot until needed. Pack hot sterilized jars with prepared beets. Pour hot syrup over beets to completely cover them. Seal, cool and store.

Yields: 6 pints
