1 lb. lentils
1 lb. frozen spinach
1 lb. noodles
2 large onions
1 large garlic head
2 tbsp. coriander
1 gallon of water
Vegetable oil
Salt and pepper

Directions:
Directions:
Cover the bottom of a large pot with oil. Add chopped onions and stir fry until they wilt. Add lentils, keep stirring for a minute. Add a gallon of water and bring to a boil, lower the heat and cover.
Lentils are ready in an hour.
Meanwhile at the last minute add spinach, it will that while cooking in 5 minutes. Don't overcook. Add salt and pepper to taste. Crus the garlic in salt using wooden pestle and mortar, add to the soup.
Add coriander, stir and add 12 oz. noodles, (more or less). Keep pot uncovered. Noodles will cook in 10 minutes. Stir.
Serve and Enjoy/ Bon Appetit.
