3 - 4 tbsp. olive oil
1 medium onion, sliced in rings
2 potatoes, peeled, cooked, and sliced
1/4 cup cilantro, chopped
10 - 12 eggs, beaten (you need enough to cover potatoes completely, add more if needed)
Salt and pepper to taste

Heat oil in deep heavy skillet or cast-iron skillet on medium high. Add onions and sauté until soft. Add cilantro and cook for a few more minutes. Place potatoes in skillet and coat thoroughly in oil. Cook for 5 minutes. Add eggs, mix thoroughly with potato mixture. Cover and bake in 350º oven for 30 minutes or until the eggs are set. Remove from the oven and loosen the edges and slide onto a plate. Cut into wedges and serve.

This is actually a Spanish dish, but I love it so much that I am sharing it with you. My sister-in-law (Aunt Beverly) cooks this torta quite often for brunch. For an informal meal, you can put the skillet on the table and cut the torta into sedges and serve from the skillet.
