Collards
2 smoked ham hocks
Chicken stock
4 chicken bouillon cubes
7 drops of bitters, Angostrure
1 tbsp. Mrs. Dash
1 tbsp. sugar
1 large onion, diced
2 cloves of garlic
1 dash of pepper

Directions:
Directions:
Rinse collards and cut away the stalks. Roll leaves and cut lengthwise and then cross wise.
In a very large pot put ham hocks and cover with chicken stock. Add bullion cubes. Add rest of ingredients and then the collards.
Bring to boil and then simmer until tender, checking on them regularly and adding stock in necessary. Cook for approximately 2 hours. remove ham hocks, remove the meat and return it to the collards.
