1 cup sifted all purpose flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp cinnamon
1/4 cup melted butter
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla extract
1/2 cup chopped apple

Topping:
1 Tbsp sugar and 1 tsp ground cinnamon

Preheat oven to 350º. Grease 9x9 pan. Sift flour, baking powder, salt and 1/4 tsp cinnamon together and set aside.
In a large bowl mix together melted butter, brown sugar, and 1/2 cup sugar until smooth. Stir in egg and vanilla. Blend in flour mixture until just combined. Stir in apples. Spread mixture into pan. Sprinkle topping on top.
Bake for 25-30 minutes in preheated oven. Finished bars should spring back when lightly touched. Cool in pan and cut into squares.
For a larger recipe, double all ingredients and put in 9 x 13 pan
