Maple glaze:
1 cup pure maple syrup
1 tbsp. orange blossom honey
2 tbsp. light brown sugar

Salmon:
8 4-oz salmon filets, skin attached
1/4 cup canola oil
salt and pepper

For maple glaze:

Combine glaze ingredients in a small saucepan and heat over medium-low heat. Cook until sugar is melted and mixture is warm. Keep warm over low heat as the salmon is prepared.

Salmon:

Preheat oven to broil. Rub the salmon with 2 tbsp. oil. Lightly season both sides with salt and pepper.

Heat remaining oil in a heavy saucepan under the broiler for 3 minutes. Carefully remove pan and place salmon pieces, skin side down, into the oil. Return pan to broiler and cook through (approx. 6 minutes).

To serve, drizzle glaze over cooked salmon filets.
