Mother's Apple Pie Recipe

6 cups sliced apples
2 T. Flour
1 cup sugar
1/2 tsp. cinnamon
1 T. lemon juice
butter

Pastry for 2 crust pie
2 1/2 c. flour
1/2 tsp. salt
2/3 cup shortening
1/3 cup ice water

Directions:

Pastry
Cut shortening into Flour. Sprinkle ice water over top and shape into a ball. Chill in refrigerator. Divide in half and roll out for top and bottom crust.

Pie
Place one of the pastry crusts in large pie plate. Mix flour sugar, and cinnamon together and place a tablespoonful on bottom crust. Place apples in crust heaping up, because they will cook down. Sprinkle lemon juice over apples. Pour remaining sugar, flour and cinnamon mixture carefully over apples and shake down. Dot with butter (about 2 T.) and place the top crust on with slits cut for steam to escape. Bake at 450º for 10 minutes and 375º for 40 to 50 minutes. (I place the pie plate on a cookie sheet because sometimes the juice drips over the edge.)

In 1964 the first year we were in Florida, mother brought some of her little tart Jonathan apples to me and taught me to make apple pies. We made several and put them in the freezer. I would take them out and finish cooking them as we wanted them. Later it was one of Rob's favorite foods and he later learned to cook them for his boys and it has become a favorite of theirs. Recently Tom was here and we cooked apple pie together. It is one of the traditions that has been handed down from Mother.
