1-2 Tomatoes
Fresh Basil Leafs
Olive Oil
2 Garlic cloves
Fresh Shredded Pecorino Romano Cheese
Salt

Directions:
1. Slice the eggplant into thin circular pieces, about half an inch (thinner or thicker is up to your preference).
2. Lie the eggplant slices on a paper towel to drain excess water out of them and wait 15-20 minutes. While waiting for eggplant slices to drain, finely chop the garlic cloves, and very thinly slice the tomatoes into circular pieces. (You only need as many tomato slices as there are Eggplant slices).
3. Once the eggplants are free of excess water, place them in a pan, drizzle them with olive oil, season them with salt and pepper and pan sear for only about 1-2 minutes on each side. You just want to get a little brown crisp on them.
4. Once the eggplants are seared, place them on a baking sheet and set the oven to 375º. While the oven is heating, place a little bit of the chopped garlic, a few basil leafs, and 1 tomatoes slice on the eggplant in that order. Lastly add the Pecorino Romano Cheese on top of the tomato (as much as you like, I like a lot).
5. Bake the eggplant pizzas in the oven until they start to crisp up. This can take a while, usually about 30-40 minutes.
6. Take out of the oven and enjoy!!!

I love eggplant pizzas! They are a healthy delicious alternative to real pizza when I'm trying to stay away from carbs! Add whatever you like on your pizzas and hope you enjoy!
