1/2 cup apple cider vinegar
1 cup water
1 tablespoon sugar
1.5 tsp. Kosher salt
1 red onion thinly sliced

Directions:
Directions:
1. Place onion slices in jars
2. Whisk vinegar, water, sugar, salt until the sugar and salt dissolve. If processing, can mix and just bring to a boil.
3. Pour vinegar mixture over onions to 1/4 inch head space.
4. Let sit at room temperature 1 hour or process 12 minutes. Can refrigerate up to two weeks
