4 chicken breasts
olive oil
kosher salt and pepper
2 oz goat cheese log - sliced
10-12 pieces sundried tomatoes
2 tbsp fresh basil chopped

Lemon Butter Sauce:
2 tbsp butter
2 tbsp finely chopped fresh garlic
2 tbsp finely chopped fresh onion
1/4 cup white wine
1/4 cup fresh lemon juice
kosher salt and pepper
1/2 cup (1 stick) butter - cut into eight pats

Directions:
Directions:
Season chicken on both sides with salt and pepper. Dab with olive oil and grill until cooked. Place goat cheese slices on top of chicken and keep warm.

Place butter, garlic and onion in pan and saute' until soft and transparent. Do not burn. Add white wine, lemon juice, kosher salt and pepper and bring to a boil. Cook and reduce to 1/4 of what you started with. Keep heat very low and add cold butter one pat at a time, beating with whisk after each one to melt into a creamy sauce. Add sundried tomatoes and basil. Heat gently but do not boil or sauce will break down. Spoon sauce over top of cheese covered, grilled chicken breasts.
