1/4 cup olive oil
2 quarts ripe cherry tomatoes, halved
2 tsp crushed red pepper flakes
4 cloves garlic,crushed
Leaves from 4 sprigs fresh basil
Salt to taste
Freshly ground black pepper to taste

1. Heat the oil in a large saucepan over high heat. Add the tomatoes,npepper flakes, and garlic and bring to a boil. Reduce the heat to medium and cook for another 5 minutes, stirring occasionally with a wooden spoon. Add the basil.
2. Pour the sauce into a food mill and purée. Season with salt and pepper. Transfer the sauce to Ziploc bags or quart containers and store in then freezer.

I tried canning with citric acid, but the taste was affected. The pepper flakes make this very spicy, so possibly less pepper flakes with Tony Chacherie's would be better for some dishes. I have used ripe heirloom tomatoes as well.
